Is there a typical grain bill when it comes to brewing spontaneously fermented beer? It’s piqued my interest because I’ve never had one finish off like this one. Up front I get a mellow suggestion of a sour Warhead that finishes with barley-like earthiness reminiscent of Grapenuts. It works for me. Produced at Hof ten Dormaal, Belgium, a self-sustaining homestead brewery whose primary source of energy for boiling and cooling processes comes from its own rapeseed oil.
